Where do you live and where are you from? I currently reside in South Florida, however, I recently moved from Raleigh/Durham, NC
What do you do for a living/profession? I am a fitness trainer specializing in TRX suspension training
What do you like to do for fun? Well, I have a 5 year old daughter, Madison who keeps me thoroughly entertained! Spending time with her is eventful, to say the least but it’s my favorite pastime. After that, I love to eat/cook so experimenting and adding new Vegan meals to our menu never gets old! Working out will always remain my passion and hobby because its fun and because I love daily challenges 🙂
How long have you been vegan? 8 months!!!
Why did you become vegan? Since changing my lifestyle over to that of a more “fit” one almost 4 years ago, I started to realize the importance of health over just the aesthetics of appearing the part. I again, wanted to challenge my body to feel its best and operate at it’s naturally designed, but optimal levels. Being fit/healthy naturally turned into being a plant-based Vegan because I wanted to be there for my daughter in the most healthy and vital capacity designed for me. Vegan simply made sense.
How was your transition? I was scared at first! Like most others, I was not sure how to feel about my void of animal based protein. I was terrified that I would lose the muscle tone and definition I worked so hard for!I literally went from eating all types of animals to all types of plants that I had never even heard of. I did it “cold-turkey,” (no pun intended), gave it 21 days and now 8 months later, the only thing I would change is that I would have started this journey sooner!
What is the funniest misconception(s) that you have heard about vegans? Lol! I think we all could do without hearing the “malnourished, physically inept, frail and/or weak” statements. My body fat and muscle tone visibly changed in a matter of weeks from an omnivore diet. That was also a very busy season for me training wise, so time for myself to workout was extremely limited. My Vegan diet compensated just fine for my slack! Lol!
What is your Favorite thing(s) about being a vegan? Besides how great and energetic I feel??!?! Proving to people that we Vegans can do the same things physically as our omnivore counterparts. Also, that we can make even more appetizing meals sans animal protein.
What do you think makes a Sexy Bad Ass Vegan?
A confident person that knows and understands their purpose! Definitely! I feel that if we are privileged enough to come the awareness that our diet will provide a cruelty-free existence for our animal counterparts, better our environment and leave less of a carbon footprint, yet still prevent, heal, and nourish our bodies….then it is our responsibility to share that with the World! Now, that’s a Sexy Bad Ass Vegan!
What is the best vegan dish that you make in your kitchen? My daughter and I call them “Heavenly Sweet Potato and Black Bean Enchiladas!!” lol! I derived it from “The China Study Cookbook” the real name is:
FABULOUS SWEET POTATO ENCHILADAS
Prep time: 20 mins
Baking time: 25 mins at 350
1/2 cup vegetable broth, divided
1 medium onion, diced
5 cloves garlic, minced
1 t coriander
2 t ground cumin
2 cups fresh spinach, chopped
2 cups black beans, chopped in a food processor
4 T soy sauce
3 cups cooked, mashed sweet potatoes
Sea salt to taste
10 large tortillas
1 jar of your favorite salsa
Preheat oven to 350
Heat 2 T broth in a medium skillet over medium-high heat. Add onion and garlic. Sauté until onion is translucent. Add coriander and cumin. Cook for 1 minute, stirring constantly.
Add remaining broth, spinach, beans, soy sauce and sweet potatoes. Cook for 3-5 mins. Remove from heat and season with salt.
Place 1/4 to 1/2 cup of mixture in center of tortilla. Roll into a burrito and place in a nonstick baking dish.
Once all burritos are assembled, pour salsa on top and cover with foil.
Bake for 25 mins. Enjoy!
What is the best Vegan Restaurant you have ever had the pleasure of eating at? This is definitely the hardest question for me!!! I am so privileged to live in South Florida that this would have to be narrowed down to my top 3! They are Green Bar & Kitchen (Ft. Lauderdale, FL), Choices Cafe (Miami, FL) and Sublime Restaurant (Ft. Lauderdale, FL).
What advice do you have for those that are thinking of transitioning to a vegan lifestyle? Simply start. Start incorporating more vegetables in your diet. Try ones that you always saw in the grocery store but dared to eat. Lol. This will help you open your palate and appreciate the natural flavors of what REAL FOOD has to offer. Do more research on animal farming and the practices and procedures utilized at those facilities. You will soon notice your taste buds begin to lose the desire for tormented animals. Moreover, being Vegan has taught me how to be assertive and to not accept anything less than the best for me and my body. Being in control of what I will and will not allow in it gives me a confidence I didn’t have previously, but has proved beneficial is so many other aspects of life. Just give it a try!
