Where do you live and where are you from?  I live in Oklahoma City, Oklahoma born and raised. I’m a southern girl, through and through!

Age?   24 years young.

What do you do for a living/profession?  I am currently a stay-at-home mom to a brilliant, sassy, beautiful 3 year old girl. I would love to go back to school for nutrition when she gets a little older, but for now my full-time job is to raise and nurture that sweet little soul. 

What do you like to do for fun?   I love random adventures with my family, relaxing with yoga, raiding local Farmers Markets, and connecting with other like-minded individuals who share the same passions.

How long have you been vegan? I’ve been vegan for 2 1/2 years now.

Why did you become vegan?    After my daughter was born, I quickly realized how important it was to be strong and healthy for her. I wanted to feel my best, so I could give her my best. As soon as I began to educate myself on the food industry and learned of the horrific abuse of millions of the innocent, beautiful creatures we over consume, my desire for a healthy life quickly turned into a passion for vegan living.

unnamed-4How was your transition?   Since transitioning into a 100% vegan lifestyle, I have never looked back! The reward that comes with feeding your body the best natural food is tremendous, and living in a way that is compassionate and empathetic to every living being is the only thing that sits well with my soul. 

What is the funniest misconception(s) that you have heard about vegans?   I think people initially assume we are protein deficient (which has never been an issue), and that we have to give up all the “yummy” food (which also could not be further from the truth!). I enjoy food so much more now than I ever did before! 

What is your Favorite thing(s) about being a vegan?    There are so many things I truly love about this lifestyle! Eating the best natural foods in abundance, setting a healthy example for my daughter, connecting with the INCREDIBLE vegan community, and doing my best to help end the cruel treatment of every animal being mistreated by our food industry.

What do you think makes a Sexy Bad Ass Vegan?  To me, the sexiest thing about a person is the way they treat others.  Kindness and compassion are the sexiest attributes I can think of. If the beauty you possess doesn’t exude from within than it’s not worth having. Also, an individual who isn’t afraid to stand for what is right. It takes an enormous amount of confidence to go against the crowd – that kind of confidence is undoubtedly sexy!

What is the best vegan dish that you make in your kitchen?  

This one is always a crowd pleaser!
Homemade Vegan Veggie Lasagna with Lemon-Basil Cashew Cheese
Ingredients:
all-natural vegan garlic marinara (32 oz)
8oz lightly steamed broccoli
1 yellow onion (chopped)
2 zucchini (chopped)
3 cloves minced garlic
2 large red peppers
2 cups fresh chopped spinach
sea salt and ground pepper
2 large zucchini sliced into wide thin “lasagna noodles”
1 1/2 cups Daiya dairy-free shredded mozzarella/cheddar
Lemon-Garlic Basil Cheese:
1 cup raw cashews (soaked in water for 30 mins)
1 cup basil
1/4 vegetable broth
1/2 nutritional yeast
1/4 cup fresh lemon juice
salt and pepper
1/2 tsp onion powder
1/2 tsp ground mustard
3 peeled garlic cloves
Instructions:
Preheat oven to 400F. Throw all the cashew cheese ingredients into your food processor. Blend until smooth.
Cook all veggies and minced garlic in your skillet for about 10-12 minutes.
Layer marinara, zucchini noodles, lemon-basil cashew cheese and sautéed veggies 2 times, then cover with Daiya cheese. Bake covered 45 mins, uncovered for an extra 5 mins.

What advice do you have for those that are thinking of transitioning to a vegan lifestyle?  My best advice is to do as much research as possible. Read books, watch documentaries, and try to connect with other vegans to learn more. The more you inform yourself the easier the transition will be!
