Miss July

This month’s Sexy BAV is a dear friend of mine! Not only is she a compassionate person… she can simply just “Throw Down” in the kitchen.  Her Food is some of the best I have ever had in my life and that says a lot.  Make sure to check her out and follow her as she journeys around the globe making delicious dishes that will satisfy any tongue palate.  Her pictures of her food will make your mouth water! You never know, she may be in your neck of the woods making her CoCo Creations or as I like to call them “CoCoLicious”

Name: Jessica aka Coco

Where do you live and where are you from?   Born and raised in Montreal, Canada and now living in Toronto. In hopes of one day moving to Miami—Hopefully sooner than later!

Age?  26

What do you do for a living/profession?  In the Food Industry for 8 years, mostly as VP Finance of a conventional food plant.  Quit it all to study Holistic Nutrition.

What do you like to do for fun?  Un-cook (raw)..! Create vegan dishes that are both highly nutritious and equally captivating. When I am not in the kitchen, I love to read, go to the market and spend time with my loved ones.

How long have you been vegan? Almost 3 years

Why did you become vegan?  In all honesty, I stumbled upon something about raw veganism online one night and I love trying new things so I just did it for the challenge and ended up liking it so much I never looked back. I have a lot more reasons now; health, environment, animal rights…It’s all such a fresh, colorful, creative and fun vegan world out there!!
How was your transition?  Overnight. Easy.
What is the funniest misconception(s) that you have heard about vegans?  The “where do you get your protein” thing keeps coming back. Very redundant. The big thing is that people are so convinced that you need dairy for your bones. How about: NO. Countless times I broke out the “there is more calcium in fresh, whole foods than in dairy/absorption” speech.
What is your Favorite thing(s) about being a vegan?  Endless possibilities. The satisfaction of knowing that you’re not only feeding your body but your soul as well. You really are what you eat. I try to make vegan food appealing and accessible to the non-vegans so they’re at least interested in trying…My ultimate favorite thing is being able to make a difference  🙂
What do you think makes a Sexy Bad Ass Vegan?   Passion & ConfidenceScreen Shot 2013-07-31 at 1.14.18 AMWhat is the best vegan dish that you make in your kitchen?   I don’t respond well to authority so I NEVER FOLLOW recipes lol. Mine are always “eyeballed” but a little something that is easily whipped up for a quick breakfast or newbies: Fresh fruits topped with coconut/cashew cream.

 Coconut/cashew cream

White “meaty” part of a fresh young coconut

½ cup to 1 cup of raw cashews – To desired consistency

1 -2 Tbsp – Raw & unpasteurized honey (technically not vegan but good health benefits)

Juice of 1 lime

½ Tbsp – Real vanilla extract

1 tsp – Himalayan salt

Blend all ingredients to creamy consistency and pour on top of your favorite fresh fruits with some mint and voilà!

What is the best Vegan Restaurant you have ever had the pleasure of eating at? Crudessence in Montreal. So hard to narrow it down to one but I have to represent my hometown!Screen Shot 2013-07-31 at 1.12.48 AM
What advice do you have for those that are thinking of transitioning to a vegan lifestyle?   Don’t start by cutting things out if you feel like it’s too much or you’re not quite ready. Just slowly add new things; a green smoothie, probiotics, learning about better food choices… Without a doubt, the bad habits and the fast food will cancel out themselves.
Do you have a website to share with the BAV nation?   I shall keep my fellow vegans and soon-to-be vegans updated on my future business ventures.. Personal Raw Chef..Vegan catering.. Who knows!!?For more pictures of my food and to keep up with the silliness:Facebook.com
